Preheat your oven to 160 degrees C ( 320 degrees F)
Peel and mash the bananas in your mixing bowl using a fork or potato masher

Using a wooden spoon mix in the oats, coconut oil, cinnamon and seeds ( if using)
4 cups Oats, 1 tbsp Coconut oil, 3 tsp Cinammon, 1 tbsp Flax or Chia Seed
Combine all the ingredients into a dough in the centre of your bowl.
Cover the bowl loosely with a teatowel and leave for 5-10 minutes for the oats to expand.
Roll out the dough to 1/4 inch thick on a lightly floured surface ( or parchment paper)
Cut out your shapes with your favourite cookie cutter and arrange on a baking tray.
Put the tray in the middle of the oven and bake for 25 minutes.
Turn the cookies over and bake for another 20 minutes until golden brown.
Remove from the oven and cool on a wire rack.
Keep in an airtight container ( like this cute cookie jar) for up to a month.
