Equipment

  • 1 Wooden spoon
  • 1 Mixing bowl
  • 1 Loaf tin
  • 1 Loaf tin liners

Ingredients

  • 1 1/2 cups Wholewheat Flour or Almond flour, Rice flour
  • 1 1/2 cups Yellow Cornmeal
  • 1 tbsp Baking Powder
  • 1 tsp Cinammon
  • 1 1/2 cups Cracked Corn
  • 1 1/2 cups Tropical Fruits mixed pineapple, mango, jackfruit, lychee, papaya, pomegranate. Dried or fresh
  • 1/2 cup Banana Chips
  • 2 tbsp Coconut flakes
  • 1/2 cup Organic Baby Food fruit and rice works well
  • 1/2 cup Sweet Potato cooked and mashed
  • 3 whole Egg lightly beaten with crushed shells

Instructions

  • Preheat oven to 375 degrees Fahrenheit / 190 degrees Celsius.

Mix dry ingredients

  • In a large mixing bowl, stir together flour, yellow cornmeal (or blue or white), baking powder and cinnamon.
  • Put the bowl to one side for a minute whilst you prepare the next ingredients.

Prepare the fruit

  • Take the cracked corn, dried fruits and crumbled banana chips and put them in a small saucepan. Cover with water and bring it to a boil.
  • Lower the heat and simmer gently for 15 minutes until the fruit is softened. Drain well and put to one side.

Combine

  • Take the large bowl with the dry ingredients and add the three lightly beaten eggs along with their crushed shells.
  • Stir in your baby food, boiled corn, and fruits along with the cooked and mashed sweet potato. Mix until you have a lovely thick and slightly lumpy-looking mixture.
  • Pour bread mix into a lined loaf tin and bake for 35 minutes.
  • Test if done by inserting a clean knife. If it comes out sticky, cook for another 10 minutes and test again.
  • Once done. Allow to cool on a rack before cutting into small cubes and freezing for later consumption.
